4 heads radicchio , quartered 4-5 tbsp olive oil 4 sirloin steaks, , weighing about 200g each 2 rosemary sprigs , stalks removed, leaves chopped lemon wedges, to garnish salt and freshly ground black pepper |

1. Heat a ridged stovetop griddle pan over medium-high heat. 2. Season the radicchio with salt, pepper, and a little olive oil. 3. Remove any excess fat from the steaks, and make small cuts around the edges to prevent them from curling up in the pan. Season with salt, pepper, rosemary and olive oil. 4. Place the radicchio on the griddle and cook for 3-4 minutes until browned with chargrill marks. Remove with tongs and leave in a warm place while you cook the steaks. 5. Place the steaks on the griddle. Depending on thickness and how well you like your steak done, grill for 2-3 minutes on each side for rare, 3-4 minutes per side for medium, and 4-5 minutes for well done. 6. While the meat is cooking, chop the radicchio in small strips and place it in the centre of individual warmed serving plates. Place the steak on top, drizzle with olive oil and garnish with lemon wedges. |
